Berry Muffins for a lockdown cheer up

Spring is nearly here, and wouldn't you know it, suddenly most of us Kiwis find ourselves ensconced at home, with time on our hands to cook. Here's my favourite go-to berry muffin recipe - high in fibre & protein & healthy fat, making for a filling and sustaining treat!





Ingredients:

2 ripe bananas

3 eggs

4 T virgin coconut oil

250g almond flour

1/2 t baking powder

1/2 t ginger

1 cup berries - blueberries/raspberries/blackberries/blackcurrants.


1. Pop bananas, eggs & coconut oil in blender & mix.

2. Add to the almond flour, baking powder & ginger, and stir to combine. Then fold in the berries.

3. Spoon batter into greased muffin trays and bake for approx 25 minutes.
