New Year summer food. Bring on fresh cherry tomatoes, corn on the cob, avocado & coriander. Yum scrum!
Combine in a large glass bowl:
4 ears of corn, steamed, cooled and cut off the cob
1-2 avocados, cut into cubes
2 C cherry tomatoes, halved
1/2 C finely diced red onion
1/4 C chopped fresh basil or coriander
Add dressing:
2 T Olive Oil
1 T Lemon juice
1 t grated lemon zest
salt & pepper
