Salmon & Kumara Patties

3 days after Christmas, I'm keen to use up the leftover oh-so-delicious smoked salmon in the simplest way possible. These patties are best baked in the oven as they may fall apart on the barbecue. I've used orange kumara in this recipe but red or purple would work equally well.


100g smoked salmon, finely sliced

500g chopped & peeled kumara

1 small red onion

2 cloves garlic

1 long green chilli

1/4 C coriander

  • Steam kumara until soft, then mash

  • Finely chop onion, garlic, chilli & coriander

  • Mix all ingredients and form into 6 patties on a baking paper lined tray

  • Drizzle with olive oil and bake at 200 degrees celsius for approx 25 minutes.
