More than just Apple Muffins


These apple cinnamon muffins are yum and contain a devious amount of protein - the recipe has been taken from "The Living Kitchen" - a superb book by Tamara Green & Sarah Grossman focusing on healing recipes to support your body during cancer treatment & recovery.


1 banana, peeled and mashed1 egg

4 T virgin coconut oil, melted

4 T honey

165g oat flour (make in blender using rolled oats)

20g sunflower seeds

20g unsweetened desiccated coconut

20g flaked almonds

2 T unsweetened vegan protein powder

2 T hemp seeds

3/4 t baking powder

1 t cinnamon

150g grated apple

75g grated carrot

3 T rolled oats


1. Combine mashed banana, egg, coconut oil and honey.

2. In another bowl, combine the flour, sunflower seeds, raisins, almonds, coconut, protein powder, hemp seeds, baking powder, cinnamon & salt.

3. Mix wet & dry ingredients, fold in grated apple & carrot.

4. Spoon batter into each muffin cup, and top with a small sprinkle of oats. Bake for 20-25 minutes.
