Black Bean & Kumara Burgers
Don't you just love the combination of black beans and kumara - these burgers are easy to make & freeze, and are a perfect lunchbox addition.
Cook 40g dry quinoa with 1/2 cup water until fluffy (approx 15 minutes)
Grate 400g kumara and mash 1 can of drained black beans.
Finely chop 1 red onion and 4 cloves garlic
Add: 1 teaspoon each of cumin, sweet paprika & chilli powder. Pinch of salt.
Mix all together along with 1 egg.
Form mixture into patties, bake 30 minutes at 180C
Delicious with avocado & chutney.
